Broiled Prawn With Chilli Sauce
 
 
 Ingredients · 6 prawns, 2 scallions
· 1 tbsp bruised garlic
· 1 tbsp bruised ginger
 
 Seasoning (A) ·2 tbsp tomato sauce, 1 tbsp fermented glutinous rice water
·1 tbsp white sugar, 1 tbsp monosodium gluta
·1 tbsp chilli sauce, 1 tbsp corn starch
·1 tbsp vinegar
 
 Seasoning (B) ·1 tbsp salt, 1 tbsp rice wine
 
Method to COOK!
 
1. Clean and devein the prawns, cut head and legs off, fry with hot oil, and drain up, boil with seasoning (B) till 80% done, drain up.
 
2. Clean and mince the scallion.
 
3. Preheat the pan with 1 tbsp salad oil, fry garlic and ginger first, then fry chilli sauce briefly, add in seasoning (A) with the prawns, cook by simmer, thicken the sauce, sprinkle a dash of minced scallion. Done.
