Broiled Prawn With Chilli Sauce |

| Ingredients |
· 6 prawns, 2 scallions
· 1 tbsp bruised garlic
· 1 tbsp bruised ginger

| Seasoning (A) |
·2 tbsp tomato sauce, 1 tbsp fermented glutinous rice water
·1 tbsp white sugar, 1 tbsp monosodium gluta
·1 tbsp chilli sauce, 1 tbsp corn starch
·1 tbsp vinegar

| Seasoning (B) |
·1 tbsp salt, 1 tbsp rice wine

Method to COOK!

Clean and devein the prawns, cut head and legs off, fry with hot oil, and drain up, boil with seasoning (B) till 80% done, drain up. |

Clean and mince the scallion. |

Preheat the pan with 1 tbsp salad oil, fry garlic and ginger first, then fry chilli sauce briefly, add in seasoning (A) with the prawns, cook by simmer, thicken the sauce, sprinkle a dash of minced scallion. Done. |
