Shark's fin Hot Pot
 
 
 Ingredients · 1 chicken
· 320g shark's fin (well-soaked)
· A few pieces of yunnan ham
· 2 pieces of ginger
 
 Shark's fin stew ·1 cup superior stew
·1 tbsp ginger juice
·1 tbsp wine
·1/2 tsp sugar
 
 Marinade ·1 tbsp ginger juice
·1 tbsp wine
·1 tsp salt
·A pinch of pepper

  Method to COOK!
 
1. Remove internal organs from chicken and wash thoroughly, brush marinade all over (inside and outside) and marinate for 30 minutes, blanch marinated chicken in boiling water. Remove and drain.
 
2. Prepare a pot of boiling water with spring onion and ginger to scald shark's fin, mix shark's fin with stew ingredients and stew for 5 minutes, remove and drain.
 
3. Put ginger, chicken and a piece of ham (or bones from ham) into a clay pot, pour in some water and cook till chicken becomes tender and soup thickens.
 
4. Put shark's fin and ham slices into clay pot and simmer till shark's fin softens and attains flavour. Season and serve hot.
