Remove internal organs from chicken and wash thoroughly, brush marinade all over (inside and outside) and marinate for 30 minutes, blanch marinated chicken in boiling water. Remove and drain. |

Prepare a pot of boiling water with spring onion and ginger to scald shark's fin, mix shark's fin with stew ingredients and stew for 5 minutes, remove and drain. |

Put ginger, chicken and a piece of ham (or bones from ham) into a clay pot, pour in some water and cook till chicken becomes tender and soup thickens. |

Put shark's fin and ham slices into clay pot and simmer till shark's fin softens and attains flavour. Season and serve hot. |
