Method to COOK!

Upper layer: mash the steamed sweet potatoes, then combine with tapioca flour, sugar and coconut milk, mix well, keep aside. |

Medium layer: combine tapioca flour, rice flour and sugar, pour in coconut milk slowly, stir until well combined, and then mix in the cooked red beans. |

Prepare the moulds, pour in adequate upper layer batter, steam over medium heat for 5 minutes, remove, add in the medium layer batter, and then steam for further 10 minutes. |

Lastly, add in the rest of upper layer batter, steam over high heat for further 10 minutes, remove from heat, serve cool. |

| To enjoy the wonderful flavour of this delicious dim sum, it must be served hot, once it is cold, the skin will be hard. |
