Prawn Dumpling
 
 
 Ingredients · 300g wheat starch
· 100g tapioca flour
· 1 tsp salt
· 500ml boiling water
· 1 tbsp shortening
 
 Filling · 300g diced prawn meat
· 100g diced fat meat
· 100g diced bamboo shoots, blanch and squeezed dry

  Method to COOK!
 
1. Upper layer: mash the steamed sweet potatoes, then combine with tapioca flour, sugar and coconut milk, mix well, keep aside.
 
2. Medium layer: combine tapioca flour, rice flour and sugar, pour in coconut milk slowly, stir until well combined, and then mix in the cooked red beans.
 
3. Prepare the moulds, pour in adequate upper layer batter, steam over medium heat for 5 minutes, remove, add in the medium layer batter, and then steam for further 10 minutes.
 
4. Lastly, add in the rest of upper layer batter, steam over high heat for further 10 minutes, remove from heat, serve cool.
Note
To enjoy the wonderful flavour of this delicious dim sum, it must be served hot, once it is cold, the skin will be hard.
