Ice-cream Mooncake
 
 
 Ingredients A: (soaked for 10 minutes) · 2 tbsp gelatine
· 4 oz water

 
 Filling: (B) · 1 tbsp milk powder
· 250 gm fresh cream
· 400 g strawberry ice-cream.

 
 Skin Ingredients (C) · 40 gm rice flour
· 30gm castor sugar
· 2 oz water
· A little red colouring
· 50gm cooked flour
· 1tsp shortening
· A little strawberry essence.

  Method to COOK!
 
1. Double-boil A till dissolved, beat milk powder, fresh cream till fluffy then add in double-boiled A.
 
2. Add in strawberry ice-cream to mix well, leave to freeze in freezer.

Method - Mooncake
 
1. Mix well C and cook till thick, add in cooked flour and shortening, knead well.
 
2. Add in essence, divide dough into 50 gm each.
 
3. Roll skin flat, wrap in ice-cream, seal edges, press into mould, add cooked flour, knock out and keep into freezer to set.
 

Tips

Bring flour to bake for a while to get cooked flour.
