Steamed Chicken With Quail Eggs |

| Ingredients |
· 1 chicken
· 1/2 oz sea moss
· 10 quail eggs
· Few leaves of lettuce
· 2 sprigs of spring onion

| Marinade |
· 1 tbsp light soy sauce
· 2 tsp shao xin wine
· 1 tsp ginger juice
|

| Ingredients for seasoning sea moss |
· 1/4 tsp salt, 1/2 tsp sugar
· 1 tsp ginger juice, 1 cup water
|

| Sauce |
· 1/4 tsp salt, 1/4 tsp sugar
· 1 tsp light soy sauce, 3/4 tsp corn flour
· Pinch of sesame oil
· 1/2 cup gravy from steamed chicken

Method to COOK!

Trim, wash, pat dry and place lettuce on serving plate. |

Boil quail eggs for 8 minutes and shell. |

| 3. |
Soak and wash sea moss. Mix with 2 tsp oil. Parboil with ginger and spring onion for a while. Dish up. Simmer in boiled simmering ingredients for 15 minutes. Remove and drain well. |

Remove entails from chicken, wash and drain. Brush inside and outside with marinade. Place spring onion into cavity of chicken. Marinate for 20 minutes. Then steam for 25 minutes, remove and leave to cool. Chop up and place over lettuce. Garnish with sea moss and quail eggs. Bring sauce to a boil and pour over chicken. Serve. |
