Gui Fei Chicken
 
 
 Ingredients · 1 chicken
· 3 slices ginger
· 3 sprigs springs onion
· 1 star aniseed
· 1 piece cinnamon stick
· 1/5 luo han guo
· 1 1/2 tbsp crude salt
· 1 tbsp light soy sauce
· 1 tbsp oyster sauce
· 8 cups of water
 
 Seasoning · 1 tbsp light soy sauce
· 1/3 tsp salt, pepper

Method to COOK!
 
1. Bring water to the boil, together with ginger, star aniseed, cinnamon stick, luo han guo. Then simmer over low heat for 10 minutes. Add in salt, light soy sauce, oyster sauce and spring onion. Bring to the boil again. Remove from heat. Discard ginger and spring onion.
 
2. Wash chicken. Rub its bill and tail with salt. Hang it for 30 minutes. Arrange on plate with breast upturned. Steam over high heat for 15 minutes. Re-arrange it with back upturned. Steam for 10 minutes more. Put it into (1) solution immediately. Soak for 3 hours (turn frequently). Take out chicken. Bring the solution to the boil. Scald chicken into the solution again. Take out and allow cooling. Chop up and serve.
