Braised Assorted Vegetables With Egg White  
 
 Ingredients · 300g winter melon
· 300g broccoli
· 225g leaf mustard
· 225g carrot
· 1 packet baby corn
· 5 strips zhusheng (wash and soak until soft)
· 150g dried black mushrooms
· 3 eggs white
· 1/2 cup fresh milk
· 2 slices ginger
 
 Seasoning · 3 cups vegetables stock
· 1/2 tsp salt
 
 Sauce · 1/4 tsp salt
· 1/4 tsp sugar
· 1/2 tsp caltrop starch
· 3 tbsp vegetable stock
· Sesame oil

Method to COOK!
 
1. Skin and thickly strip winter melon and carrot. Cut broccoli into small pieces. Trim off leaves of leaf mustard. Soak and wash mushrooms, mix with pinch of sugar, caltrop starch, light soy sauce and oil. Steam until cooked.
 
2. Bring seasoning to the boil. Put in vegetable and cook until soft. Arrange neatly on serving plate, saut¨¦ ginger with 1 tbsp of oil. Add sauce and bring to the boil. Pour over prepared content.
 
 
3. Mix egg whites and milk. Add in ? tsp of salt, 1 tsp of caltrop starch and 1 tsp of oil, combine. Heat wok with 1 tbsp of oil, pour in mixture and fry until set. Dish up on the centre of plate. Serve.
