Birthday Buns |

| Basic yeast dough for making pau |
| Ingredients (A) |
· 500g pau flour, sifted, 1 tsp salt
· 1 tbsp instant yeast, 100g castor sugar
· 240ml water, 3 tbsp shortening

· 1 tbsp double-action baking powder

| Filling |
| Ingredients |
·200g lotus seeds, removed skin, boiled until soft and blended into paste
·170g sugar, 150ml oil
·A little red colouring (for brushing skin)

Method to COOK!

Mix all the ingredients a together and knead into smooth and elastic dough. |

Filling: put 3 tbsp sugar into wok, stir and cook till golden brown, add lotus paste, sugar and stir, cook until thick, add oil and cook until it can leave the side of wok, dish up and leave to cool, divide and form into small balls |

Divide dough into small portions (any size you wish), wrap up filling and form into the shape of birthday bun, press to get a line in the center, brush with a little red colouring, steam for 10 minutes until cooked, serve hot. |

| After steaming, if the centre line is not clear, you may press another time while the buns are still hot. |
