Dried Scallop On Turnip |

| Ingredients |
· 900g turnip, 12 medium-sized dried scallops
· 2 cups stock, 10g black moss
· 1 slice ginger, 1tsp wine
|

| Seasoning |
· 1 tsp rose wine, 1 tsp ginger juice
· 1 tbsp cooked oil
|

| Simmering Ingredients |
· 1 can stock, 1 tbsp oil, 1 slice ginger
|

| Sauce |
· ecup steaming water of dried scallops
· 1 tsp oyster sauce
· 1 tsp caltrop starch
· 1 tsp granulated sugar
· Dash of sesame oil

Method to COOK!

| 1. |
Wash dried scallops; soak in 1 cup of stock for 2 hours. Steam for ehour, remove and tear away hard parts. Pour in seasoning (set aside steaming water of dried scallops). |

Peel and wash turnip. Cut into thick pieces. Cut into ring with mould, stuff in dried scallops. Arrange on a plate. Steam for 1 hour. |

Soak black moss in water until it becomes tender. Add 1 tbsp of oil, mix well and wash. Simmer with simmering ingredients until it becomes tender. Put in the centre of the plate. |

Heat some oil, sauteginger slices. Sizzle wine. Pour in sauce and bring to the boil. Pour the sauce over dried scallops and black moss. |
