Dried Scallop On Turnip
 
 
 Ingredients · 900g turnip, 12 medium-sized dried scallops
· 2 cups stock, 10g black moss
· 1 slice ginger, 1tsp wine
 
 Seasoning · 1 tsp rose wine, 1 tsp ginger juice
· 1 tbsp cooked oil
 
 Simmering Ingredients · 1 can stock, 1 tbsp oil, 1 slice ginger
 
 Sauce · ecup steaming water of dried scallops
· 1 tsp oyster sauce
· 1 tsp caltrop starch
· 1 tsp granulated sugar
· Dash of sesame oil

  Method to COOK!
 
1. Wash dried scallops; soak in 1 cup of stock for 2 hours. Steam for ehour, remove and tear away hard parts. Pour in seasoning (set aside steaming water of dried scallops).
 
2. Peel and wash turnip. Cut into thick pieces. Cut into ring with mould, stuff in dried scallops. Arrange on a plate. Steam for 1 hour.
 
3. Soak black moss in water until it becomes tender. Add 1 tbsp of oil, mix well and wash. Simmer with simmering ingredients until it becomes tender. Put in the centre of the plate.
 
4. Heat some oil, sauteginger slices. Sizzle wine. Pour in sauce and bring to the boil. Pour the sauce over dried scallops and black moss.
