Put shallot and garlic in the blender and pounded together until very fine, remove and mix well with reddish cheese, reddish cheese juice and all seasoning, heat up a little oil to saut¨¦ the mixture until fragrant. |

Rub the marinade mixture over the duck skin and inside, marinate for 2 hours. Deep-fry the marinated duck in the hot oil until fragrant and slightly brown. |

Bring water to boil in a deep pot, put in prefried duck and simmer for approximately 45 minutes till cooked or until the sauce is thickened, remove from the heat and covered soak for further 5 minutes, dish up, cut into pieces and serve with the sauce. |
