Crispy chicken In Lemon Sauce |

| Ingredients |
· 1 chicken, remove bone
· Seasoned flour (150g corn flour, 1tbsp plain flour, 2 tsp salt and dash of pepper)

| Marinade |
· 1 tsp salt, 1 tsp sugar, 1 egg, 2 tbsp shao xin wine
· 1/2 tsp custard powder, 1 tbsp corn flour, 1 tbsp plain flour

| Sauce |
· 3 tbsp concentrated lemon juice
· 2 tbsp concentrated orange juice
· 1 tsp fresh squeezed lemon juice
· 2 tbsp sugar, 1/2 tsp salt, 150ml water

Method to COOK!

Combine chicken with marinade and season for 1 hour. |

Coat chicken with seasoned flour and deep-fry in hot oil until golden brown. Dish and drain. Leave to cool and cut into pieces. |

Put all sauce ingredients into wok and cook until thick. Pour over chicken and serve. |
