| Ingredients |
· 1200g pork belly (with skin)
· 1 tbsp rice vinegar
· 3 garlic cloves
· 3 shallots

| Marinade |
· 1 tbsp oyster sauce, 1/2 tbsp light soy sauce
· 1/2 tbsp sugar, 1 tsp monosodium glutamate
· 2 tsp sesame oil, 1/2 tsp pepper
· 1 1/2 tsp five spices powder, 2 tsp salt

Pound the garlic cloves and shallots until finely. Remove, add in marinade, and mix well. Keep aside. Blanch the pork belly into boiling water for a while, dish up and pat-dry. Score few slits on the meat side with a sharp knife, then rub well with the marinade mixture. Brush 1 tbsp of the rice vinegar onto the skin. Marinate for 2 hours. |

Arrange the marinated pork belly on a wire rack. Roast in the preheated oven at 220c for about 30 minutes. Remove. Prick holes over the skin with a fork, then brush the pork skin with a little cooking oil, continue roast until golden in color and the skin is crispy, remove from oven. Cut into pieces and serve. |
