· 2 pig's knuckles (sectioned)
· 1 lemon
· 1/2 red chili (in ring)

| Spicy Sauce |
· 1/8 tsp salt
· 1/2 cup of sugar
· 1 cup of vinegar
· 2 tbsp lemon juice

Method to COOK!

Wash lemon and cut into half, slice one portion and squeeze juice with the remaining. |

Heat and prepare sauce, wait until cool. |

Scrape off hairs from pig's knuckles, scald and rinse with cold water. |

Heat a pot of water and put in knuckles, cook knuckles for 45 minutes till tender, and then transfer knuckles to some iced water and soak for 1 hour, remove and wipe dry. |
