Braised Duck In Bean Sauce |

| Ingredients |
· 1/2 fresh duck
· 1 stalk Chinese celery
· 2 cloves shallots
· 4 tbsp bean sauce
|

| Marinade |
· 1 tsp salt, 1/2 tsp sugar
· 2 tsp dark soy sauce, 1 tsp corn flour, 1 tbsp oil
|

| Sauce |
· 2 cups water
· 1 tsp chicken powder
· 1 tbsp sugar
· 1 tbsp light soy sauce
|

| Thickening Glaze |
· 1 tsp corn flour, 2 tbsp water
|

Method to COOK!

| 1. |
Rub marinade on the duck and leave it for 20 minutes. |

Trim the leaves off the Chinese celery. Dice Chinese celery, slice shallot thinly and crush bean sauce lightly. |

Heat 6 tbsp of oil in wok; pan-fry the duck until golden browned, set aside. |

Heat 3 tbsp of oil in wok, saut¨¦ Chinese celery and shallot until fragrant, stir in bean sauce and sauce ingredients, put the duck in and simmer for 45 minutes. |

Take the duck out and chop it into pieces. Thicken the sauce with corn flour solution. Pour it over the duck pieces to serve. |
