Spicy Duck Tongues Marinated With Tea |

| Ingredients |
· 200g duck tongues
|
| |
| Spicy marinade |
· 1 cup water, 1/2 cup dark soy sauce
· 2 tbsp rock sugar, 2 pieces cinnamon stick
· 4 star anises, 2 tsaoko amomum fruits
· A few cloves, 2 tbsp Chinese black tea leaves

Method to COOK!

Blanch duck tongues in boiling water for a minute. Drain and set aside. |

Boil spicy marinade ingredients (except tea leaves) for 20 minutes. Add tea leaves and simmer for another 5 minutes. Strain the liquid. |

Re-boil the marinade. Put duck tongues in and simmer for 5 minutes. Leave to soak for 1 hour. |

Serve cold. |
