Porridge, also known as congee, differs in the east and west. In the west, porridge is made of stewed oats with either milk or water, served together with salt, sugar or milk. Western porridges are made of grains such as wheat, oatmeal, rye and even barley. They are usually enjoyed with fruits, nuts and other forms of sweeteners. In the East however, porridges are rice-based. They are usually savoury and eaten with various condiments, such as peanuts, anchovies, salted eggs and preserved bean curd.
