Minced Pork Congee With Sweet Potato |

| Ingredients |
·120g rice, some water
·1 dried scallop, 120g minced pork
·Some diced spring onion
·1 sweet potato (yellow body)
·Rice Mix: 1 tsp salt, 2 tsp oil
|

| Seasoning |
·A pinch of salt, a pinch of sugar
·1 tsp light soy sauce, 1 tsp corn flour
·1 tsp water, a dash of sesame oil
·A few shakes of pepper

Method to COOK!

| 1. |
Soak dried scallop in water till tender, reserve for later use. |

Season minced pork. |
| |
| 3. |
Wash sweet potato, skin and dice finely. |
| |
| 4. |
Wash rice and stir in rice mix, marinate for 10 minutes. |

| 5. |
Boil some water and put in rice, dried scallop and sweet potato, simmer till rice is split, add in minced pork and cook till done. Sprinkle with diced spring onion and a little pepper. Serve hot. |
