Rinse conpoy and soak till tender. |

Shell prawns and remove intestines, rinse thoroughly and slit prawns without open, wipe dry, rinse and dry scallops, season prawns and scallops. |

Prepare a pot of water and cook till boil, add in rice and conpoy, cook till congee is ready and add in prawns and scallops, simmer till ingredients are done, sprinkle diced spring onion and a little pepper. Serve hot. |
