Pound dried chilies, shallots, garlic and dried shrimp powder into a fine paste, add salt, heat up 2 tbsp oil and saut¨¦ till fragrant, dish up and keep aside. |

Heat 4 tbsp oil and stir-fry prawns till cooked. Dish up and leave to cool. Shell prawns and slice them into halves, keep the heads and shell to make the stock. |

In the remaining oil, stir-fry chopped garlic till fragrant, add water, pork bones, prawns heads and shells, simmer for 1-2 hours over low heat, strain the stock into a pot. |

Add pork and bring to the boil, lower heat and simmer for 15 minutes till the meat is cooked. Remove the meat and slice thinly, add salt to stock. |

Put some rice noodles into bowl. Arrange prawns, meat, egg and green vegetables on top. Pour over boiling stock and sprinkle with fried shallots. |
