Prawn Noodle Soup
 
 
 Ingredients ·600g rice noodles, blanch
·20dried chilies
·8 shallots
·3 pips garlic
·1 tsp dried shrimp powder
·1/2 tsp salt
·6 tbsp oil
·600g prawns
·1 tsp chopped garlic
·1/2 pot water
·300g pork bones
·300g lean pork / chicken meat
·Salt to taste
·300g green vegetables, cut into 5cm length, blanch
·3 hard-boiled eggs, shelled and cut into wedges
·3 tbsp fried shallots

  Method to COOK!
 
1. Pound dried chilies, shallots, garlic and dried shrimp powder into a fine paste, add salt, heat up 2 tbsp oil and saut¨¦ till fragrant, dish up and keep aside.
 
2. Heat 4 tbsp oil and stir-fry prawns till cooked. Dish up and leave to cool. Shell prawns and slice them into halves, keep the heads and shell to make the stock.
 
3. In the remaining oil, stir-fry chopped garlic till fragrant, add water, pork bones, prawns heads and shells, simmer for 1-2 hours over low heat, strain the stock into a pot.
 
4. Add pork and bring to the boil, lower heat and simmer for 15 minutes till the meat is cooked. Remove the meat and slice thinly, add salt to stock.
 
5. Put some rice noodles into bowl. Arrange prawns, meat, egg and green vegetables on top. Pour over boiling stock and sprinkle with fried shallots.
