Fried Rice Noodles |

| Ingredients |
·1 tbsp oil, 2 eggs, lightly beaten with 1 tsp salt
·3 tbsp oil, 1 tbsp chopped garlic

| Ingredients (A) |
·100g shredded chicken / pork
·100g shelled prawns
·3 black mushrooms, soaked, shredded

| Seasoning sauce: (mixed) |
·250ml water, 1 tbsp light soy sauce
·1 tbsp oyster sauce, 1 tsp dark soy sauce
·1 1 tbsp tomato sauce, 1 tbsp chilli sauce
·1 cube chicken stock, 1 tsp sesame oil
·1 tsp pepper and salt to taste
·200g rice noodle, soaked 20 minutes, drained

·60g shredded roasted pork
·150g bean sprouts, 1 onion, shredded

| Garnishing |
·1 red chilli, shredded, 1 stalk spring onion, shredded

Method to COOK!

| 1. |
Heat up 1 tbsp oil, pour in eamount of egg mixture and swirl to form thin omelette, turn over and fry for another 10 seconds, dish up, repeat the same for the remaining egg mixture, roll up omelettes and cut into shreds. |

Heat up 3 tbsp oil, sautechopped garlic until fragrant, add (A) and stir fry until aromatic. |

Pour in seasoning sauce and bring to boil, add rice noodle and stir fry until it has absorbed all the seasoning sauce and dry. |

Mix in (B) and stir –fry until well-mixed, add bean sprouts and stir-fry till cooked but still crispy. Mix in omelette. Taste. |

Dish onto serving plate, sprinkle shredded red chilli and spring onion on top as garnishing. Serve hot. |
