Remove stewed shark's fin and arrange neatly in the centre of plate. |

Bring 2 cups of stock to the boil, add seasoning, mix well and bring to the boil again, pour over shark's fin. |

Combine caltrop starch and water, beat egg white and mix well, pour the mixture into a pot, cook over low heat until sticky, remove from heat, cook in boiling water for a while, remove with slotted ladle. Place onto shark's fin and garnish with brown meat of crab. Serve hot. |
