Stewed Shark's fin With Egg White
 
 
 Ingredients · 225g shark's fin (pre-prepared), stewed
· 2 cups stock
· 1 egg white
· 1/3 tsp caltrop starch
· 1 tbsp water
· Cooked brown meat of crab
 
 Seasoning · 1 tsp salt, 1 tsp light soy sauce
· 2 tsp water chestnut powder
· Sesame oil, pepper, 2 tbsp water

  Method to COOK!
 
1. Remove stewed shark's fin and arrange neatly in the centre of plate.
 
2. Bring 2 cups of stock to the boil, add seasoning, mix well and bring to the boil again, pour over shark's fin.
 
3. Combine caltrop starch and water, beat egg white and mix well, pour the mixture into a pot, cook over low heat until sticky, remove from heat, cook in boiling water for a while, remove with slotted ladle. Place onto shark's fin and garnish with brown meat of crab. Serve hot.
