· 3 crabs
· 160g old ginger (chopped)
· 3 tbsp evaporated milk

| Seasoning |
·3 tbsp dark soy sauce
·2 tbsp oyster sauce
·3 tbsp caster sugar
·Adequate water

Method to COOK!

Blanch crabs in the boiling water until cooked through, remove and drain well, cut into pieces. |

Sir-fry the chopped ginger in a preheated wok without oil until fragrant, dish up and leave aside. |

Heat 3 tbsp oil in preheated wok to saut¨¦ prefried chopped ginger till golden in colour. Add in crabs and stir fry for a few seconds, pour in water and seasoning, bring to the boil and simmer over low heat until the sauce is thicken (add extra water if necessary). |

Lastly pour in evaporated milk and stir fry over medium till well coated, remove and serve hot. |
