Stir-fried Shredded Shrimp In Lettuce Cup |

| Ingredients |
· 1kg shredded shrimp
· 6 water chestnuts
· 4 dried mushrooms
· 10 lettuce leaves
· 1 cup cornflakes

| Seasoning (A) |
· 1/2 eggs white
· 1/2 tbsp salt
· A dash of pepper
· 1 tbsp cornstarch

| Seasoning (B) |
· 1 tbsp cooking wine
· 1/2 tbsp salt
· A dash of pepper and sesame oil
· 3 tbsp water
· 1/2 tbsp cornstarch water

Method to COOK!

Rinse shrimps well and dry with paper towel, then dice and marinate in seasoning (A) for 10 minutes. Blanch quickly in oil and remove. |

Soak mushrooms in water until soft and dice. Dice water chestnuts. Heat up 2 tbsp oil in wok. Stir fry mushrooms and water chestnuts for a minutes. Return shrimps and season with seasoning (B) to taste. Stir until well-mixed and remove from heat. Add cornflakes and mix well. Remove to serving plate. |

Rinse lettuces leaves well and trim into circles. Serve by wrapping shrimps mixture in lettuce. |
