Stir-fried Large Prawns |

| Ingredients |
· 6 large prawns
· 1 braid of garlic, hashed
· 1 tsp diced red chili
· 1 tbsp diced spring onion
· 1 tbsp cooking wine
|

| Marinade |
· 1/8 tsp salt
· 1 tsp corn flour
· A dash of pepper
|
| |
| Sauce |
· 1 1/2 tbsp light soy sauce
· 1 tsp sugar
· A dash of sesame oil and pepper
|

Method to COOK!

| 1. |
Trim prawns and dispose intestines (retain shells). Rinse thoroughly and wipe dry, slit prawns without open. Add in marinade and marinate for 5 minutes, stir-fry briskly till almost done. Remove and drain. |

Heat 2 tbsp oil and saut¨¦ garlic, put in prawns and pour in wine and sauce mixture. Stir-fry till sauce almost dries. Dish up and sprinkle with diced spring onion and red chili. Serve hot. |
