Stir-fried Large Prawns  
 
 Ingredients · 6 large prawns
· 1 braid of garlic, hashed
· 1 tsp diced red chili
· 1 tbsp diced spring onion
· 1 tbsp cooking wine
 
 Marinade · 1/8 tsp salt
· 1 tsp corn flour
· A dash of pepper
 
 Sauce · 1 1/2 tbsp light soy sauce
· 1 tsp sugar
· A dash of sesame oil and pepper

  Method to COOK!
 
1. Trim prawns and dispose intestines (retain shells). Rinse thoroughly and wipe dry, slit prawns without open. Add in marinade and marinate for 5 minutes, stir-fry briskly till almost done. Remove and drain.
 
2. Heat 2 tbsp oil and saut¨¦ garlic, put in prawns and pour in wine and sauce mixture. Stir-fry till sauce almost dries. Dish up and sprinkle with diced spring onion and red chili. Serve hot.
