Wash and rub crab, steam until done and pick the meat. |

Wash and steam salted egg until done, shell and reserve egg yolk only. Put egg yolk in processor, add ? cup of stock and work until egg yolk dissolves. |

Heat ? tbsp of oil, sizzle wine, add water and the remaining stock, seasoning and shark's fin. Bring to the boil over low heat. Add egg mixture, water chestnut powder solution and crab meat and mix well. Bring to the boil and serve hot. |
