Stir-fried Eel Sections With Shrimp
 
 
 Ingredients · 2 small eels, 1/3 lb. shelled shrimps
· 2 scallions, 4 small tender ginger slices
 
 Seasoning ·(A) 2 tbsp egg white, 1 tbsp salt, 1 tbsp corn starch
·(B) 1 tbsp cooking wine, 1 tbsp light soy sauce
·(C) 1 tbsp cooking wine, 1 tsp salt, a dash of white pepper, 1 tbsp corn starch water
 
Method to COOK!
 
1. Rinse eels well and cut into small sections, devein shrimps and rinse well, dry completely and marinate in seasoning (A) for 10 minutes, blanch in warm oil and then remove.
 
2. Heat 2 tbsp of oil in wok, stir-fry eel sections for a minute, season with seasoning (B) to taste, mix well and remove. Rinse scallion and cut into sections.
 
3. Heat 2 tbsp of oil to stir-fry scallion sections and ginger pieces until fragrant, add shrimps and return eels to mix, seasoning with seasoning (C) to taste. Stir until evenly-combined and remove from heat. Serve hot.

  Note
 
1. Rinse eel with vinegar first to remove the mucus on the skin, then wash off under running water.
2. Stir-fry eel rapidly over high heat, the faster you stir-fry, the crunchier the eel will be, slow fry will become bland and tough.
3. Usually eel have lengthwise before cutting into section. In this recipe, just cut eel directly into sections.
