Double Boil Pig's Tail with Dried Longans  
 
 Ingredients · 500g spareribs (cut into pieces)
· 1 pig's tail (cut into small sections)
· 30g dried longan
· 10g cinnamon stick
· 1 tsp szechuan pepper
· 4 star anises
· 10g medlar seeds
· 6 slices dang gui
· 1200ml chicken stock
 
 Seasoning · 1/2 tsp monosodium glutamate
· 1 1/4 tsp salt
· 1 tbsp light soy sauce

  Method to COOK!
 
1. Blanch the spareribs and pig's tail into boiling water. Dish up. Rinse under cool water, and then drain well. Remove, put into a pot.
 
2. Add in the rest of ingredients and chicken stock, double boil in the preheat steamer over low heat for 2 hours. Add in seasoning when serve.
