Fresh Huai Shan and Carrot Soup |

| Ingredients |
· 300g spare ribs
· 200g fresh huai shan, peeled and cut into thick slices
· 1 carrot, peeled and cut into thick slices
· 6 red dates, seeded
· 2500ml water

| Seasoning |
·Salt to taste

Cook sapre ribs in boiling water for 5 minutes, dish and rinse. |

Put all ingredients into a stock pot and bring to boil at high heat. Lower the heat and simmer for 2 hours. Add in salt and serve hot. |
