Soy Bean & Pig's Trotter Soup
 
 
 Ingredients · epig's trotter
· 150g soy bean
· 10g dried black moss (soak till soft)
· 3 bean curd sticks (soaked and sectioned)
· 3000ml water
 
 Seasoning ·1 tsp sugar
·1 tbsp light soy sauce
·A dash of pepper and chicken stock granules
·2 stalks spring onion, cut into3 cm length, add in last

  Method to COOK!
 
1. Rinse the pigs trotter pieces. Blanch in boiling water for few minutes. Dish up and rinse under running. Keep aside.
 
2. Soak soy bean for about 1 hour. Remove and drain well.
 
3. Bring water to boil. Add in pig's trotter and soy bean, cook for 1 hour.
 
4. Add in the bean curd sticks. Cook for 30 minutes. Lastly add in the black moss. Continue cook for further 30 minutes. Season with a little salt. Serve hot.
