| Ingredients |
· 1 duck
· 3 slices ginger
· 3 stalks spring onions (length)
· 1 tbsp ginger powder
· 2 tbsp wine

Method to COOK!

Clean & rub duck with salt thoroughly, set aside for 1 hour. |

Put ginger, spring onion, wine into duck's stomach, steam duck till tender for 2 hours, drain, remove and cut in bite size, dish up, sauce keep for later use. |

Heat wok & fry 2 tsp salt on low heat till dry then sprinkle ginger powder over, stir. |

Blend duck sauce into fried salt, pour 1 tbsp cook oil over, stir, and serve. |
