Winter Melon Rolls |

| Ingredients |
· 300g winter melon
· 150g chicken breast
· 20g carrot
· 1 dried black mushroom, soak until soft
· 1 sprig Chinese parsley
|

| Marinade |
·1 tsp salt
·1 tsp sugar
·1 tsp light soy sauce
·A little pepper and sesame oil
|

| Sauce |
·4 tbsp hot stock
·1 tbsp light soy sauce
·1 tsp dark soy sauce
·1 tsp sugar

Method to COOK!

| 1. |
Slice winter melon thinly into 5cm by 15cm rectangles. Blanch in boiling water briefly until soft. |

Shred chicken breast, carrot and mushroom. Chop Chinese parsley roughly. Mix with marinade. |

| 3. |
Place winter melon flat. Put enough filling on it. Roll into a barrel shape. |

| 4. |
Arrange on a greased plate and steam over high heat for 8 minutes. Pour sauce over and serve hot. |
