Cut the trotter into convenient pieces. Blanch into boiling water. Remove and rinse under running cool water. Drain and keep aside.

Put trotter pieces in a deep pot, pour in water, ingredients (A) and seasoning. Bring to the boil. Then reduce to low heat. Simmer for 45 minutes until the trotter pieces are tender. |

Heat up 2 tbsp oil in the preheated wok to saut¨¦ the chopped garlic, chili paste and dried shrimp paste till fragrant. Put in braised trotter pieces and gravy. Bring back to the boil; thicken gravy with enough corn starch solution. Serve hot. |
