Braised Red Trotter Pieces
 
 
 Ingredients (A) · 1/2 no (600g) front trotter
· 2 stems spring onion (chopped)
· 1 tbsp chopped garlic
· 4 tbsp chili paste
· 1 tsp dried shrimp paste
 
 Ingredients (B) · 2 stalks spring onion
· 6 ginger slices
· 2 star anises
 
 Seasoning · 4 tbsp light soy sauce
· 6 chunks rock sugar
· 2 tbsp shao xin wine
· 1/2 tsp salt
· 2 tbsp sesame oil
· 1 tbsp oyster sauce
· 3/4 tsp monosodium glutamate
· 1 tbsp dark soy sauce

  Method to COOK!
 
1. Cut the trotter into convenient pieces. Blanch into boiling water. Remove and rinse under running cool water. Drain and keep aside.
 
2. Put trotter pieces in a deep pot, pour in water, ingredients (A) and seasoning. Bring to the boil. Then reduce to low heat. Simmer for 45 minutes until the trotter pieces are tender.
 
3. Heat up 2 tbsp oil in the preheated wok to saut¨¦ the chopped garlic, chili paste and dried shrimp paste till fragrant. Put in braised trotter pieces and gravy. Bring back to the boil; thicken gravy with enough corn starch solution. Serve hot.
