Stewed Ribs With Shallots |

| Ingredients |
· 500g spare-ribs (cut into pieces)
· 15-20 no shallots
· 3 no red chili (shredded)
· 1 tbsp chopped spring onion

| Seasoning |
· 2 tsp light soy sauce
· 1 tsp sugar
· 2 tsp oyster sauce
· 1/4 tsp dark soy sauce
· 1 tsp shao xin wine
· 1 bowl of Water

| Marinade |
· 1 tsp salt
· 2 tsp shao xin wine
· Adequate tapioca flour
|

Method to COOK!

Rinse spare-ribs. Blench in marinade and season for 20 minutes.

Heat up 3 tbsp oil to fragrant shallots. Remove. Place in marinated ribs to shallow-fry until slightly golden. Return the shallots to the wok, stir well. |

Add in seasoning and water. Bring to the boil. Reduce the heat; simmer until the gravy is thickened. Stir in the tapioca flour water. Dish up. Sprinkle with chopped spring onions and shredded chili. Serve hot. |
