Braised Bitter Gourd With Chicken
 
 
 Ingredients · 1 bitter gourd (300g) cut into strips
· 10 slices ginger
· 1 chicken thigh (cut into pieces)
· 50g sliced carrot
· 200ml stock
· Adequate oil for deep-frying
 
 Seasoning · 1 tsp sugar
· 1 tsp light soy sauce
· 1 tbsp oyster sauce
· 1/2 tbsp fermented soy bean
· 1 tsp shao xin wine

  Method to COOK!
 
1. Heat up oil for deep-frying, put in chicken and deep-fry for 1 minute. Dish up. Then put in bitter gourd and deep-fry for half minute. Dish up.
 
2. Leave 2 tbsp oil in wok, saut¨¦ ginger until fragrant. Add in seasoning, bitter gourd, chicken and stir well.
 
3. Pour in stock and bring to the boil, cover the lid, lower the heat and simmer until the gravy is thick. Dish up and serve hot.
