Chicken Wings In Thick Soy Sauce
 
 
 Ingredients · 1 kg chicken wings
· 500g light soy sauce
· 1 tbsp dark soy sauce
· 130 g rock sugar
· 3 tbsp shaoxin wine
· 1 tsp ginger juice
· A dash of sesame oil
 
 Spicy sauce ·2 star aniseeds
·1 tsp Sichuan peppercorns
·edried tangerine peel
·1 piece cinnamon stick
·8 cloves
·5 cups of water

  Method to COOK!
 
1. Rub chicken bill and tail with salt, brush the outside and inside of chicken with 1 tbsp of wine and 1 tbsp of ginger juice, place in container and cover for a while.
 
2. B ring spicy sauce to the boil, simmer over low heat until 4 cups of sauce remain, drain, add in light soy sauce, dark soy sauce, rock sugar and wine, set aside.
 
3. Tie the neck of chicken with a string, bring epot of water to the boil, hold chicken with one hand and pour boiling water onto it several times, hang it up and let it slight dry, simmer in boiling spicy sauce, cover with lid and bring to the boil, reduce to low heat and simmer for 15 minutes, turn chicken upside down and bring to the boil over high heat, then reduce to low heat again, simmer for 10 minutes, rinse in ice water, put back to spicy sauce and soak for 5 minutes, remove and brush on sesame oil.
