Rinse tomatoes, chillies, and onion, cut into cubes. |

Chop garlic and shallots. Cut trotter into pieces, scald in boiling water and drain well. |

Heat up 2 tbsp oil to fragrant chopped garlic, shallots and lemon grass, add in cinnamon sticks and trotter, stir until fragrant, pour in water, bring to boil and reduce the heat; simmer over low heat for 30 minutes. |

Blend in seasoning, tomatoes, onion and chillies, cook until the trotter is tender and gravy is thicken. Serve. |
