· 1 small winter melon
· 500ml broth

· 150g chicken meat
· 3 dried black mushrooms
· 2 dried scallops
· 2 water chestnuts
· 20g snow fungus
· 10 lotus seeds, 6 red dates
· 1 tbsp qi zi, 1 tbsp shao xin wine
· Salt to taste

Wash winter melon, cut open the top part, and scoop out the seeds and pith. |

Pour broth in pot bring to the boil. Add in (B). Bring to the boil then pour the broth into winter melon. |

Cover with the top part of the melon. Pot winter melon in a double boiler. Cook for 2 hours. Ready to serve. |
