Stewed Winter Melon
 
 
 Ingredients (A) · 1 small winter melon
· 500ml broth
 
 Ingredients: (B) Diced: · 150g chicken meat
· 3 dried black mushrooms
· 2 dried scallops
· 2 water chestnuts
· 20g snow fungus
· 10 lotus seeds, 6 red dates
· 1 tbsp qi zi, 1 tbsp shao xin wine
· Salt to taste
 
Method to COOK!
 
1. Wash winter melon, cut open the top part, and scoop out the seeds and pith.
 
2. Pour broth in pot bring to the boil. Add in (B). Bring to the boil then pour the broth into winter melon.
 
3. Cover with the top part of the melon. Pot winter melon in a double boiler. Cook for 2 hours. Ready to serve.
