Rub salt and black pepper on duck breast. Leave it for 20 minutes. |

Mix char siu sauce with wine and food colouring. |

Place duck breast in the char siu sauce mixture (from step 2) and marinate for 2 hours. |

Preheat oven at 210 C. Grill duck breast for 25 minutes until brown. Let it cool off for 20 minutes before slicing. |

Bring dipping sauce ingredients to the boil. Mix well and serve with duck breast. |
