Fried Yellow Eel Slices with Vinegar  
 
 Ingredients · 1 no ( about 200g ) yellow eel ( boneless, sliced )
· 50g fresh leek ( sliced )
· 10 fresh ginger slices
· 1 tsp chopped garlic
 
 Marinade · 1/2 tsp light soy sauce
· 1/2 tsp sesame oil
· 1 tsp shaoxing wine
· 1 tbsp water
· 1/2 tsp cornstarch
 
 Seasoning
( mix well )
· 1 tbsp oyster sauce
· 1 tbsp light soy sauce
· 4 tsp chinese rice vinegar
· 1 tsp sugar
· 1/4 tsp salt
· 1/4 tsp monosodium glutamate

  Method to COOK!
 
1. Season the eel slices with marinade, marinate for 15 minutes, parboil into hot oil for a while, remove and ready to use.
 
2. Leave 1 tbsp oil in the preheated wok to fragrant chopped garlic and ginger slices. Add in prefried eel slices and seasoning, toss well.
 
3. Lastly, add in fresj leek, stir fry until the sauce is slightly absorbed. Dish up and serve hot.
