Deep-fried Chicken Fillet With Mangoes
 
 
 Ingredients · 2 mangoes
· 6 oz chicken fillet
· Some black fungus
· 1 slice ginger
· 2 stalks spring onion (length)
 
 Marinade · 1 tsp light soy sauce
· 1 tsp wine
· 1/3 tsp sugar
· A pinch of pepper & sesame oil
 
 Seasoning · 1 tsp salt
· 1 tsp sugar
· 1 tbsp vinegar
· 2 tbsp stock
· A pinch of pepper & sesame oil

  Method to COOK!
 
1. Remove seed & peel from mangoes, cut flesh into strips.
 
2. Wash and dry chicken fillet, blend into marinade ingredients & stir well, deep fried with warm oil till color change.
 
3. Soak black fungus till swollen, clean and drain.
 
4. Sauteginger with 2 tbsp oil till fragrant, put fungus in & seasoning over, add mangoes strips, chicken fillet, and spring onion in, stir till done, serve hot.
