| Ingredients |
· 3 extra large prawns, 160g shelled shrimps
· 1 salted egg yolk, 1 egg

| Seasoning |
· 1/4 tsp salt, 1 tbsp egg white
· 1 tsp corn flour, A few shakes of pepper

Method to COOK!

Divide salted egg yolk into 4 equal portions. |

Remove intestines from prawns and trim well ( do not shell ), rinse and wipe dry, slit prawns without open, sprinkle with salt and pepper and marinade for a while. |

Rinse shrimps thoroughly and wipe dry, hash with back of chopper and stir in seasoning, stir well till hashed shrimps become a paste and serve as filing. |

Brush a thin layer of corn flour on the slits of prawns, stuff in 1 tbsp shrimp filling with a portion of the salted egg at the centre. |

Heat 1/2 wok of water and put in stuffed prawns, steam for 10 minutes till done, dish up and add a dash of sesame oil, serve hot. |
