Minced Prawn Tofu |

| Ingredients |
· 150g prawns
· 2 tbsp minced meat with fat
· 1 box young bean curd
· 1 sprig coriander

| Seasoning |
· (A) 1 tbsp egg white 1 tsp salt
· 1 tsp corn flour
· (B) ecup fine stock
· 1 tsp salt
· 1 tbsp corn starch solution
· An adequate amount of sesame oil and pepper

Method to COOK!

Shell and devein prawns, drain and mince. Add in minced meat and season with seasoning A. |

Take out young bean curd, curve pattern on with a mould. Scoop out a little of the centre filling with a small knife. Top liberally with minced prawn. Put it in a steamer and steam for 5 minutes. |

Boil seasoning B. when the minced prawn is cooked ready. Pour seasoning sauce on and sprinkle minced coriander on top. Done. |

Box bean curd is smoother and stays in shape. Traditional bean curd can be selected if desired. Soak the bean curd in salted water for 20 minutes before use to prevent loss of water. |

To avoid hand from sticky, dip hand with a little water to fill the prawn paste filling. |
