| Ingredients |
· 380g king-size clams, 4 eggs
· A little diced of spring onion
· A slice of ginger, a stalk of spring onion (sectioned)

· ecup of water, 1 tsp light soy sauce
· 1 tsp salt, 1/8 tsp sugar
· 1 tsp shao xin wine, A pinch of pepper
· 1 tsp oil

Method to COOK!

Rinse clams thoroughly and scald with ginger and spring onion, remove from heat when shells are slightly opened. Rinsed well and drain. |

Beat eggs and stir in seasoning, sieve mixture and pour into a tureen. Arrange clams in egg mixture. |

Heat a pot of water and steam eggs with a medium heat till set. Remove and sprinkle diced spring onion. Serve hot. |
