Steamed Clams With Eggs
 
 
 Ingredients · 380g king-size clams, 4 eggs
· A little diced of spring onion
· A slice of ginger, a stalk of spring onion (sectioned)
 
 Seasoning · ecup of water, 1 tsp light soy sauce
· 1 tsp salt, 1/8 tsp sugar
· 1 tsp shao xin wine, A pinch of pepper
· 1 tsp oil
 
Method to COOK!
 
1. Rinse clams thoroughly and scald with ginger and spring onion, remove from heat when shells are slightly opened. Rinsed well and drain.
 
2. Beat eggs and stir in seasoning, sieve mixture and pour into a tureen. Arrange clams in egg mixture.
 
3. Heat a pot of water and steam eggs with a medium heat till set. Remove and sprinkle diced spring onion. Serve hot.
